*Double Up The Protein: (please these will be a little mushy, but still delicious)
- 60g (1 Cup) Good.All Protein Powder Vanilla Performance
- 60g ½ cup whole wheat flour (or any flour of choice)
- 1 tsp baking powder
- ½ tsp cinnamon (optional)
- 1 tbsp maple syrup (or sweetener of choice)
- 1 ½ cup plant milk (or water)
- 1/2 cup fresh or frozen blueberries (or any berry/fruit of your choice)
Vegan butter or Coconut oil for cooking
Instructions:
1. Combine all dry ingredients in one bowl:
In a large bowl, whisk together the Good. All Protein Powder, whole wheat flour, baking powder, and cinnamon (if using).
2. Add wet ingredients to the dry mixture:
Pour in the maple syrup and gradually at the plant milk (or water) directly into the same bowl. Stir until everything is just combined. If the batter is too thick, add a little more plant milk or water to adjust the consistency.
3. Fold in your choice of fruit:
Gently fold the blueberries (or your preferred berry/fruit) into the batter, making sure they're evenly distributed.
4. Cook the pancakes:
Heat a non-stick pan or griddle over medium heat and lightly grease with vegan butter or coconut oil. Once the pan is hot, pour about 1/4 cup of batter onto the pan for each pancake. Cook for 2-3 minutes on one side until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
5. Serve and enjoy:
Stack your pancakes on a plate and top with extra berries, maple syrup, or your favourite toppings like nut butter or coconut yogurt.
Nutritional Benefits:
- High in protein from the Good. All Protein Powder.
- Antioxidants from the blueberries (or fruit of your choice).
- Fiber from the whole wheat flour.
This simple, one-bowl recipe makes clean-up easy while offering a nutritious and delicious post-workout meal or breakfast. Enjoy!
