Organic ceremonial Cacao Single (Theobroma cacao)
The premium Certified Organic cacao mass is a product of Papua New Guinea. It is a single-origin raw cacao paste and is also known as cacao liquor, cacao or cocoa mass. Cacao Paste is produced by grinding the Cacao Nibs to a smooth liquid state, hence the name 'liquor', however, no alcohol is present. Once solidified it becomes a 100% pure food ingredient of the highest ceremonial grade. Cacao is a rich source of magnesium and sulphur which helps with relaxation and promotes healthy hair, skin and nails. Full of magnesium and antioxidants, raw cacao provides the chocolatey richness we all know and love.
Cacao paste is from organic cacao nibs which have been removed from the pods, naturally fermented for 3-5 days in wooden containers (reaching a temperature of around 50o C) then sun-dried. The beans are fragmented into ‘nibs’ before they are ground. The friction of the grinding process raises the temperature of the nibs above the natural melting point for cacao of 30 – 36o C, to produce a rich liquid. The raw liquid then solidifies as it cools to produce this wonderful dark cacao paste. This raw cacao paste is made from certified organic cacao beans and contains no additives.
Other uses for this wonderful chocolate elixir are in homemade chocolate, raw desserts, superfood mixes and baked treats.
